Tapioca Pancake

STEP 1:
Heat a non-stick skillet over medium heat.

 

STEP 2:

Working quickly, sprinkle the tapioca flour evenly over the whole skillet in a thin layer, ensuring there are no holes or cracks.

 

STEP 3:

Use the underside of a large spoon to smooth and compress the flour, which will congeal as it heats to form a pancake.

STEP 4:

Let the pancake cook for about 1–2 minutes, or until it slides easily in the pan. Turn and cook the other side for 1 minute.

 

STEP 5:

Add your choice of filling.

 

Suggestions include:

- shredded coconut, caramel and banana

- melted dark chocolate and strawberries

- grated mozzarella and parmesan cheese

- butter and salt
